Dee’s Low Fat Baked Buffalo Cauliflower “Wings” Gluten-Free and Vegan

So… I had a cauliflower launguishing in the fridge from the veg box last week and I was trying to think of something inventive to do with it, but wanted to eat something spicy and delicious.  This recipe is so simple yet deliciously tasty, it feels like something sinful, but it’s not at all.

For 2 people

1 head of cauliflower broken into florets

1 cup of flour (any flour will do but I used Brown Rice Flour)

1 cup of ice-cold water (stick some ice cubes in it)

a little oil

Method:-

Whisk the flour and water together until smooth and add in the oil.  Coat the cauliflower pieces in it and bake in a PRE-HEATED oven in an oiled baking tray at the highest temperature (230 I used).  Bake for 15-20 mins until brown and crispy (if you want to forgo the healthy part you can deep fry for super crispy but baking works out just fine).   Remove “wings” and coat with Franks Hot Sauce or any other hot sauce and stick back in the oven for another 5 mins.  You can serve with celery sticks and a vegan blue cheese dressing or blue cheese dressing if not vegan.  I’ll do the vegan blue cheese dressing next week.
These are super yum and really tasty – a good movie snack!
