Dees Vegan Traditional Sausage “Burger” with Slow Cooked Caramelised Maple Onions

29 Jun

My friends and I would always make a luscious vegan ‘sausage’ burger packed with lots of onion and on a yummy toasted bun, whenever we would BBQ. I was chatting to them recently about my upcoming visit to see them and we decided we had to make this legendary BBQ treat again!

You will need:
1 packet of Dee’s Vegan Sausages
Seasoning of choice; such as Cajun, herbs, taco, etc.
1 medium onion, sliced
Salt /Pepper
15mls oil
20mls maple syrup
2 seeded or onion burger baps/buns
2 ripe tomatoes
A handful of Baby leaves

Firstly, heat a small pan with a little oil and add in the onion and some salt/pepper. Cook on low until brown and soft, after about 15 minutes add the maple syrup and cook another 3-4 minutes.

While the onions are cooking, season the sausages. I used 5-7g of Cajun seasoning to sprinkle on top, then cook the sausages according to the instructions on the pack (I grilled mine.)

Next, slice the tomatoes and toast the burger buns.

When everything is ready, place 3-4 tomato slices on the bottom of the bun, then top it with the sausage, onion and baby leaves and top it with the other half of the bun.

Then enjoy with your favourite summer drinks.

Top Tips:

You can prep the onion in larger batches and keep them in the fridge for 3-4 days and simply heat up as needed.

You can use all sorts of different types of buns or for the kids, why not use a cookie cutter to cut out a fun shape of toasted bread and use this as the bun.

Enjoy, Eoin.

Vegan warm summer potato salad with a lemon and roasted garlic dressing.

25 Jun

I just adore having a lush potato salad at a summer BBQ, but it can be hard to find one that is Vegan and egg free! Thankfully this is a delicious vegan version you can make and bring to your next BBQ and it’s one everyone will love.

You will need:
1 kg baby waxy potatoes
Sea salt
Black pepper

For the dressing
2 lemons, juiced, plus zest of 1
10g fresh chives, chopped
10g fresh mint, chopped
200mls soya yoghurt
1 bulb of garlic

Heat the oven to 170c.

Cut the bulb of garlic in half, brush with some olive oil, sprinkle on a pinch of salt and wrap in tinfoil. Bake in the oven for 20 minutes.

Cook the potatoes in boiling water until soft (15-20 minutes), then drain and allow them to cool slightly.

Next, start on the dressing. Add all ingredients into a blender, except the herbs, and blend until smooth.

Add half of the chopped herbs and set aside.

Arrange the potatoes on a dish or platter while they are still slightly warm. Layer them up with the rest of the herbs (see pic), until you’ve used them all up.

Then pour the dressing over the potatoes and add a few fresh chopped herbs and serve.

Enjoy, Eoin.

Pizza 3 Ways – #3 Apple & Strawberry Vegan Pizza with Brown Sugar & Cinnamon

20 Jun

This is the third recipe from my collection of Pizza 3 Ways using a shop bought dough. This time I’ve created a dessert pizza which kids and adults alike will love.

This is pizza #3 – Apple & Strawberry Pizza with Brown Sugar & Cinnamon

You will need:
1 packet of pizza base (2 base per pack+ pizza sauce)
1 red apple, cored and sliced
4 slices strawberry
50g brown sugar
1 tsp cinnamon
70 mls vanilla soya yogurt
2 strawberries for decoration
Optional –
20g flaked almonds

Preheat oven 180-190c

At this point, you should have ½ a pizza base left from recipe #1 (Cheesy Garlic Pizza)

In an oven proof tray, place the pizza dough on top and curl up the edges a little to create a lip to place the filling in.

In a bowl, place the sliced apple, sliced strawberry as well as the sugar and cinnamon. Mix gently and place in the pizza base and top with some flaked almonds if you wish.

Place in the oven and cook for 10-12 minutes, or until the pizza base is brown and the apple is cooked.

Cut and serve with the soya yogurt.

I got the pizza pack in Tesco’s, in the refrigerated area near the puff pastry/butter.

The following recipes (#1 and #2) will use the rest of the pizza dough.

I wanted to use a quick and easy readymade pizza pack to show you how to make 3 recipes from it -A starter, a main and a dessert. Perfect for a speedy meal for the kids or friends during the summertime.

75g vegan butter
1 tbsp dry parsley
3 cloves of garlic, crushed
100g of Vegan cheese

Start by making the garlic butter.

In a pot, melt the butter and add the garlic and parsley. Heat on low for 2-3 minutes to infuse the butter. Set aside and cool.

Take one of the pizza bases and cut it in half.

Place on an oven tray and brush with the garlic butter. Sprinkle the cheese on the top and add half of the mixed herbs. Bake for 10-15 minutes or until golden brown.

While garlic bread is cooking, add half of the pizza sauce that came with the base (or use 200mls of your own pizza sauce) to a small saucepan and heat.

Review of Dee’s vegan range by MniuMniu Polish blog

12 Jun

As a part of Dee’s sponsorship of National Vegetarian week, we asked vegan and lifestyle bloggers to review Dee’s vegan range. One of the bloggers, Ilona a Polish blogger and author of MniuMniu vegan blog, created some delicious recipes using our burger range. She gave us an amazing review which we want to share with you in English.

Dee's vegan range

Ilona from Mniu Mniu was delighted that Dee’s range may be available in the future in Poland, as she feels the country is missing a broad range of healthy vegan foods such as Dee’s. She was also super impressed that Dee’s products don’t contain salt which means that they are ideal not only for vegans and vegetarians, but also for health conscious people who want to avoid salt for the health reasons such as a high cholesterol levels.

Dee's vegan sausages

There are 6 aromatic sausages in a pack. The sausages contain Irish Dulse Seaweed, Pea protein and spices, because they do not contain gluten or soy they are quite soft, so their texture is different to an ordinary vegan sausage. High in protein, they are ideal for breakfast or dinner.  Due to the soft texture it’s best to fry, grill or bake the sausages.

dee's omega burger

There are 2 burgers in the pack made from organic ingredients; brown rice, carrots, broccoli, hemp seeds, sunflower seeds and spices.  The wonderful ingredients have a delicate taste and you can really get the flavour of the vegetables. They are great with mustard sauce.

Dee's vegan Spicy Bean Burger

Made with organic ingredients: millet, adzuki beans, herbs and spices. Great with BBQ sauce and a bit of radish and fresh spinach.

dee's vegan Thai vegetable pot

An express nutritious meal, which needs only 4 minutes in a microwave and it’s ready to eat. Apart from quinoa, the pot contains; lentils, tomatoes, butternut squash, carrots, lime, onion, potatoes, red curry paste, galangal, tomato puree, spirit vinegar, garlic puree, lemongrass, sunflower oil and coriander leaf.
This was Ilona’s favourite among our 4 ranges and she really enjoyed it. She loved the different blend of vegetables and spices.  She can’t wait to pick up some Dee’s products when they become available in Poland as she feels there’s a big gap in delicious plant-based foods in the Polish market.
