Dee’s Spicy vegan Bean Burgers with Miso Peanut Butter Sauce and Stir Fried Veggies.

I was shopping the other day and spotted some really nice oyster and shitake mushrooms. I was craving a tasty miso stir fry, so I bought a few extra bits and hey presto, this little gem was created!

You will need:
1 Pack of Dee’s spicy bean burgers
For the sauce:
3-4 tablespoons of peanut butter
1 tbsp of miso paste
1 tsp chilli paste
2 cloves of garlic, chopped
1 inch of ginger, chopped
1 handful of fresh coriander, chopped
Coconut oil /olive oil
300-400g of green veggies, sliced (such as – pak choi, spring onion, sugar snaps)
100-150g of mixed mushrooms, sliced
Optional (toasted sesame seeds)

Method
First make the miso sauce. In a bowl add the miso paste, chilli paste, ginger, garlic, coriander, peanut butter and fresh coriander. Add in a little water if it’s too thick, or even some coconut milk if you prefer. Then leave it aside until needed.
Cook the burgers as per the pack instructions and add a few spoons of the miso sauce on top and let them sit for two minutes off the heat. Cut them into large pieces and leave aside until assembly.
In a big wok cook, off your mushrooms and veggies until they’ve browned. Do this in small batches or even each item separately so you don’t overcrowd the pan. Add a few tablespoons of your sauce and cook for one minute more.
Place the pieces of burger on top of the veggies and serve with some salad or a portion of stir fried rice or noodles.

Dee’s Organic Omega Burger, Vegan Basil Pesto and Baby leaves served in a Hot Pitta Bread

Dee’s Organic Omega Burger with Vegan Basil Pesto and Baby leaves served in a Hot Pitta Bread

You will need

1 pack Dee’s Organic Omega Burgers
2 pitta bread(uses GF option)
Salad
Basil pesto
Oil
Salt / pepper
Chipotle hot sauce (optional)

Cook the burger according to instruction on packet. You can freeze the second one if you wish or cook it for someone else!
I cook them in a pan wait a little, add salt and pepper until golden brown on each side .
Toast the pitta bread
Cut in half down one side to make a pocket.
Spread some pesto in the inside, place the burger and salad inside, add little hot sauce and enjoy for a quick and easy lunch.

Tips

Serve with your favourite home made chips or with your favourite packet of crisps
even with some raw vegetable and hummus.
All make a great lunch combo
You can make your own vegan pesto if you wish there are some great store bought ones

To make your ownn Vegan Pesto you will need

Basil
Toasted pine nuts
Olive oil
Garlic
Nutritional yeast (to replace the cheesy flavour )

Just pop it all in a blender and mix until well blended and is smooth, season to taste !

Oprah tells us Hempseeds and Adzuki Beans top Superfoods List for 2012

Well, we knew this back in 2007 when we came up with ingredients for Dee’s Organic Omega Burger which is full of shelled organic hempseeds and for Dee’s Spicy Bean Burger, which is made with Aduki beans, or Adzuki beans, either will do!

Lynn Andriani on the Oprah website says”Hempseeds are rich in magnesium, potassium, iron, protein and essential omega-3, -6 and -9 fatty acids, hemp seeds are tiny but filling. And unlike flaxseeds, they aren’t bound up in a hard shell, so you don’t have to grind them to unlock their nutritional benefits.”

We agree, ADUKI Beans are rich in the best sort of fiber – soluble fiber – which helps to eliminate cholesterol from the body. They are a good source of Phosphorus, Potassium and Copper, and a very good source of Folate and Manganese.  As a low-sodium food they help reduce blood pressure. Not only are they low in fat, but when combined with grains, beans supply high quality protein which provides a healthy alternative to meat or other animal protein. Adzuki beans also contain protease inhibitors which frustrate the development of cancerous cells.  They also support liver and kidney function and are anti-inflammatory

Dee’s Organic “Spicy Bean Burger”

 The brilliant Aduki bean plays a starring role in this deliciously spiced burger.  Aduki beans are carefully blended with Millet, (a wholegrain) Herbs and Spices to pack a nutritious punch.

Ingredients:-

Organic Aduki Beans, Organic Millet, Organic Chickpea Flour, Organic Herbs  & Organic Spices.

This burger has been a favourite of our customers from the local farmer’s markets.  It is a “NUTRITIONAL POWERHOUSE” packed full of Wholegrains, Superseeds like hempseeds and sunflower seeds and fresh vegetables.

Ingredients:-

 

Organic Carrots, Organic Broccoli, Organic Wholegrain Brown Rice, Organic Millet, Organic Hempseeds, Organic Sunflower Seeds, Organic Vegetables, Organic Herbs and Fairtrade Spices.
